Bradford Research Center to offer farm-to-table dinner




For years, the Bradford Research Center invited University of Missouri College of Agriculture, Food and Natural Resources faculty and staff to the Center for a lunch featuring numerous varieties of sweet corn.

The Bradford Research Center is bringing that event to the public, with some exciting additions. The Center is offering a farm-to-table dinner featuring sweet corn grown at Bradford. University Club Executive Chef Matthia Accurso has curated a one-of-a-kind menu, highlighting the versatility and flavor of sweet corn, especially for the event, which will take place Thursday, Sept. 5.

The cost of the event is $40 per person and space is limited. Registration is due by Friday, Aug. 30.

“We’re excited to offer this exclusive event to the public,” said Andrew Biggs, superintendent of the Bradford Research Center. “Matthia’s menu is outstanding, and we’ll have several sweet corn varieties for our audience. It’s going to be a really fun and unique evening.”

There will be a cash bar during the event. Biggs will lead a wagon tour of the Center at 5:45 p.m., with a reception following at 6:30 p.m. Dinner begins at 7 p.m.

Accurso’s menu includes corn and manchego custard with sunflower sprouts and buttermilk corn crackers, corn-battered braised beef short ribs and horseradish cream, sweet corn potato rolls with whipped butter, grilled white corn salad, smoked chile grilled prime beef strip loin, and cookies and ice cream.

There will also be several sweet corn varieties for guests to try.

“This event is a great opportunity to see what the Bradford Research Center is all about,” Biggs said. “Not only we will showcase what research is taking place at the Center, we’ll share a meal that features food grown directly on the property.”

The Bradford Research Center is located at 4968 South Rangeline Road in Columbia, Mo., and is one of the University of Missouri College of Agriculture, Food and Natural Resources’ Agricultural Research Centers.
