Le Greta Hudson is a former Assistant Professor at the University of Missouri. Currently, she is an adjunct faculty member. She has worked in many areas of dietetics. Le Greta has held positions with Academy of Nutrition and Dietetic at the local and state levels. She is a former Chair of the Missouri State Committee of Dietitians licensure board and held an appointment as a Program Reviewer for the Academy’s Accreditation Council for Education in Nutrition and Dietetics. Le Greta is a former Commissioner on Commission on Dietetic Registration (CDR) and a past Vice Chair. Currently she serves on the board of the Accreditation Council for Education in Nutrition and Dietetics. Also serves as the Chief Promotion Officer for Foodcultureology.com, co-leading immersive experiences for registered dietitians, dietetic interns and others surrounding food and the environment in Ireland, the Mediterranean diet and lifestyle in Italy, and the unique food culture and campaigns promoting healthy eating habits in Portugal.
