Sam Anand develops soybean varieties with superior oil composition characteristics, which include soybean oil with low saturated fatty acid (palmitic and stearic), lower linolenic acid and greater oleic acid content. His other interests are to breed large-seeded soybean varieties for tofu, small-seeded ones for natto, and varieties with higher seed protein. He has joint research projects with David Sleper and Grover Shannon and has a 50 percent research appointment.
